Ingredients :
Tortilla Chips 1 Can of Beans (Kidney, Red, Cannellini or any) Grated or Sliced Cheese (cheddar or favorite) Leftover Meat (optional) Cooking Spray
Optional Ingredients :
Sour Cream Guacamole (see "Guacamole: Fresh & Easy" for quick video directions) Salsa
Equipment :
Baking Dish Spatula Pot Holder Timer Can Opener Sharp Knife Cutting Board
1. Preheat the oven to 350 degrees and make sure the oven rack is placed in the top half of the oven.
2. Either spray the baking dish with a light coat of cooking spray or rub a light coat of any cooking oil onto the baking dish surface with a paper towel. 3. Cover the bottom of the baking dish with a generous layer of tortilla chips. 4. Open the can of beans and use the can top as a dam to keep the beans in the can as you pour out the liquid in the sink. Cover the tortilla chips with an even layer of drained beans. 5. If you're using meat, either cut it with a knife or shred it by hand into bite sized pieces and add it as a layer over the chips and beans. 6. Cover everything in the pan with a generous layer of either sliced or grated (cheddar or any other) cheese. 7. Put the baking dish in the oven when the oven temperature has reached 350 degrees. Then set either the oven timer or a kitchen clock for 20 minutes. 8. Use a pot holder to take the baked nachos out of the oven when the cooking timer sounds. 9. Cut and scoop the nachos out of the baking dish with a spatula and either serve them hot as is or with your choice of sour cream, guacamole and/or salsa.
